After posting two Valentine’s Day dinners showcasing seafood, my meat tooth (yes I have a meat tooth. It’s kinda like my sweet tooth but not as active) started aching. I don’t eat red meat often, but every now and then I do crave a thick juicy cheeseburger or a flavorful cut of steak. This is for you my fellow beefeaters. Sirloin tip steak filled with tangy blue cheese and spinach. Flank steak works just as well, and of course goat cheese and another green can be substituted. Served with an orzo, bell pepper, and tomato salad, these rollatinis made a great meal. I don’t have an exact recipe yet, but wanted to share the idea and pix with everyone.
